I am Japanese, and Italian cuisine chef. I am also Koji (fermented rice) maker as well as caterer and pop up chef. I produce and sell Koji products such as Shio-koji, Miso paste or White Tamari that all are made from Koji that is very key for making Japanese condiments or Sake. I am focus on making them with local ingredients that are very rare to find in MTL.
