I'm a chef of consulate general of Japan in Montreal and also a koji-maker. Koji is a fermented preserved food made from rice and koji mold and is a traditional Japanese cultural practice that has been passed down for generations. Koji is also an essential ingredient in Japanese seasonings, and I make it myself from scratch, using it to make miso, soy sauce, hot sauce, and other condiments.
